Shepherds Pie


This yum, easy one pot dish is that staple - Shepherd's Pie or sometimes referred to as Cottage pie - which is actually a slightly different pie altogether....
The image barely does it justice, but if you want to make your own yum version, here is my recipe- the amounts are kind of loose, but its hard to mess it up!

Heat Oven to 375 degress
1 lb of ground meat (beef, chuck, turkey, chicken, whatever you prefer)
1/2 a chopped onion
1 8 oz can/jar whole mushrooms
Package frozen peas and carrots
(additionally add in canned or frozen corn, or any other cooked veg, frozen or canned no specific quantities, just whatever you fancy)
1lb of russet or yukon gold potatoes/and/or a packet of Loaded Baked instant mashed potatoes
1/2 to 1 cup of sharp grated cheddar cheese
Sautee the meat and onions in a little oil, when cooked through (no longer pink)
transfer to a pyrex or 9x12 oven proof dish
Add the mushrooms, and the veg, and stir together
Either while browning the meat, or after, boil the potatoes until ready for mashing
When potatoes are done, add 1/2 cup milk and 4 tablespoons or butter or your favorite butter/spread substitute,and mash to pieces.  If you want to add the instant mash, prepare according to package and add to prepared real potatoes-
transfer potatoes to meat and veg in dish, use a fork to make a groove pattern over the whole potato, then sprinkle the cheese over the top
Cook in oven for about 30 minutes...until cheese bubbles...make some gravy, instant, or from a jar...whatever you like and serve piping hot!
